It is not very obvious but one can actually force fallback mode
from gnome3's control-center:

User menu -> System Settings -> System Info -> Graphics -> Forced Fallback Mode.

Of course that will take you to a metacity session with gnome-panel, etc.
You still need the gnome-session config to run xmonad.

Alternatively one can set a fallback or xmonad session with gsettings
(which is comparable to the gconf setting to change window manager in gnome2).
